One good thing






I'd heard of Italian Easter Rice Pie since moving to Rhode Island. Honestly, I can't remember if I've had it since we got here, but it sounds awesome. A custard of eggs, ricotta and rice baked in a pie shell with a little lemon and cinnamon. What's not to love?

Since it's a minor local tradition, I wanted to get one this Easter for my family to try, but just never got to it.

Yesterday my company's bank manager came in to meet with the boss. For some reason, she brought a tray of sandwich wraps and a tray of pastries with her. Guess what was included in the pastries? Rice pie!

I hunted up a recipe on Pinterest, and it seems pretty easy. But some nice lady brought it to us, completely unprompted and unexpected. And that's a good thing.
